Fried fish ala Panda ..
Ingredients for two:
1 meaty fish (score diagonally, marinate with salt and lime juice)
1 tomato
garlic and shallot
chilli
How to cook:
Chop garlic, shallot and chilli (or mix them with the food processor)
Chop tomato (remove the juice and the seed first)
Stir the above with a teaspoon of oil, add sugar and salt. If the sauce is too thick, add water. Remove the sauce and let it rest.
Fried fish with medium heat (and lot of oil). Try not to flip the fish too often as it will break the skin. For a medium size fish, it probably will take between 10-15 mins for the first side and about half of the time for the other.
Serve the fish with the sauce on top :) ...
