Fried fish ala Panda ..

Ingredients for two:
  • 1 meaty fish (score diagonally, marinate with salt and lime juice)
  • 1 tomato
  • garlic and shallot
  • chilli

    How to cook:
  • Chop garlic, shallot and chilli (or mix them with the food processor)
  • Chop tomato (remove the juice and the seed first)
  • Stir the above with a teaspoon of oil, add sugar and salt. If the sauce is too thick, add water. Remove the sauce and let it rest.
  • Fried fish with medium heat (and lot of oil). Try not to flip the fish too often as it will break the skin. For a medium size fish, it probably will take between 10-15 mins for the first side and about half of the time for the other.
  • Serve the fish with the sauce on top :) ...
